California Hippie Jook
Rice Soup with Cabbage and Pumpkin Seeds!
1/2 cup rice
4 cups vegetable stock
1/4 cup raw pepitas (tender pumpkin seeds)
1 cup finely shredded cabbage
1/3 cup chopped mushrooms
1/4 cup chopped leeks
3 Tbls. dried seaweed
sesame oil
soy sauce
sri ra-cha

 

Cook rice in broth in pot or rice cooker. After 10 minutes, add cabbage, mushrooms, leeks, and seaweed to rice. Keep cooking, at least 15 minutes, stirring occasionally, until rice is soft and everything is a thick and soupy consistency

Heat pan over high heat, add pumpkin seeds and roast until they pop and brown. They can burn quickly, be aware.

Serve jook in bowl, top with roasted pumpin seeds, soy sauce, sesame oil, and hot sri ra-cha sauce to taste.

This is so healthy and loaded with flavor!
