Cheddar & Potato Soup
Delicious Soup!
1 Tbls. Vegetable Oil
1 Onion
2 Cloves of Garlic
1 Jalapeno Pepper
1/4 to 1/2 tsp. Chili Powder
2 large Potatoes
2 cups of Chicken Stock or Veg. Stock
2 1/4 Cups Cheddar Cheese(medium or old) (9 oz)
2 cups Milk
1 can corn or 1 cup frozen corn
1/2 tsp. salt
1/2 tsp. pepper

 

Chop onions and garlic. Chop and remove seeds from jalapeno pepper. Dice Potatoes.

In a large saucepan heat oil over medium heat and cook onion, garlic jalapeno pepper and chili powder for about 5 minutes or until softened.

Add potatoes and stock. Bring to a boil, cover and simmer for 15 minutes or until potatoes are softened.

Transfer to blender or food processor and chop until there are small pieces or if you like you can puree until smooth. If you have a hand chopper you can use it instead of having to transfer to a blender. Return soup to saucepan over medium heat and add 2 cups of the cheese, milk, corn, salt and pepper. Cook stirring for 15 to 20 minutes or until steaming and cheese is melted. Serve garnished with remaining grated cheese and/or green onions.

This soup is really easy to make and is great served with Italian Bread and a salad. Even the kids will like it!
