Chicken Rice Soup Soup |

1 whole fresh chicken(Perdue works best) 1 med onion 1 package family size vigo yellow rice 1 packed mixed frozen vegetables(you can use fresh vegetables, quicker to use frozen)

par boil (fresh) chicken for 1 1/2 to 2 hours until chicken is tender. cut up onion and par boil with chicken. salt and pepper to taste. de-bone chicken after cooling and put back into pot. add mixed vegetables and rice and cook till rice is near done.add water till soup gets to your liking. the rice will continue to cook while sitting in pot (do not over cook) this recipe is simple and i have gotten many compliments from it.
