1 kg rich colourd pumpkin 1 onion 4 cups chicken or beef stock 2 tsp. salt pepper 1 Tbls. butter 1 Tbls. sugar 1/2 to 3/4 cup of cream
|
1. Peel and chop pumpkin into medium sized pieces. Put into large saucepan with stock and seasoning and cook until the pumpkin is soft.
2. Wait until cool then place in a blender one third at a time.
3. Add cream (optional) and re-heat in saucepan.
4. Serve immediately!
