Country Style Pumpkin Soup
A Creamy Country Style Pumpkin soup.
1 kg rich colourd pumpkin
1 onion
4 cups chicken or beef stock
2 tsp. salt
pepper
1 Tbls. butter
1 Tbls. sugar
1/2 to 3/4 cup of cream

 

1. Peel and chop pumpkin into medium sized pieces. Put into large saucepan with stock and seasoning and cook until the pumpkin is soft.

2. Wait until cool then place in a blender one third at a time.

3. Add cream (optional) and re-heat in saucepan.

4. Serve immediately!
