Cream of Green Bean and Broccoli Soup spicy venue |
7 stalks Broccoli 1quart and 1 pint whipping cream 2 medium white Vandalia onions 1 package celery 1 stick butter or margerine 3 quarts Chicken broth Chives 2 packages Shredded Colby cheese 4-5 fresh jalepenos
In a stock pot, melt butter, then add green beans, finely diced onions, finely sliced celery, finely diced jalapenos ( I prefer to use a electric dicer to get the pieces small) broccoli stalks and flowerettes, (discard any tough portions of the stalks). Saute for 5 minutes and be sure to stir to keep everything moving. Add chicken broth and bring to a boil, reduce heat and continue to simmer until everything is very tender. Allow to cool, then break up the flowerettes with a long handled spoon so they are small enough to fit on a spoon. Return to heat and start stirring in the cream until reaches the consistency that you prefer. Sprinkle on top with some shredded colby cheese and with diced chives
