Creamy Cabbage Soup Low-Fat Recipe |

1 small head of cabbage (1 lb) 1 medium onion, chopped 4 oz. turkey smoked sausage (90% fat free-Polish keilbasa type) sliced 4 cups defatted chicken broth 3/4 cup non-fat non dairy creamer (or skim milk) 1/4 cup flour 1/4 tsp. fresh ground pepper 1 clove garlic, minced

Chop cabbage. Spray skillet with non-stick cooking spray, add onion, garlic, and sausage. Saute lightly, adding a little extra chicken broth if needed. Add cabbage then transfer to a large saucepan and add chicken broth. Simmer until vegetables are tender. Combine cold non-dairy creamer (or skim milk) with flour in a covered container and shake well (to prevent lumps). Stir into soup. Heat until bubbly for a delicious low fat soup!
