CyberSoup (Wild Rice Clam Chowder)
Clam chowder...Minnesota style!
6-8 red potatoes (cubed)
2 cups wild rice (cooked)
2 cups sliced mushrooms
1 1/2 onions (diced)
8 cups chicken broth
1/4 cup lemon juice
2 cups clams
1/2 cup clam juice
4 Tbls. butter
1 1/2 cups half and half
1/2 cup flour
3 bay leaves
1 tsp. salt
1 tsp. pepper

 

Boil 6-8 red potatoes in 8 cups of chicken broth, lemon juice, and clam juice for 20 minutes. While potatoes are cooking, saute onions and mushrooms in butter. When tender, add the flour to make a paste. Add to the broth. Add the cooked wildrice, clams, bay leaves, salt, and pepper to the broth and cook 10 more minutes. Add the half and half and warm up.
