Easy & Hearty Homemade Vegetable Stew
Main Ingredients:
olive oil
Pam spray
1/3 cup white vinegar
1/2 teaspoon salt
2 potatoes
4 carrots
2 stalks of celery
1/2 white onion
1/2 red onion
2 cloves of garlic, pressed
1/2 zucchini squash, sliced, then cut into 4ths
2 Fresno peppers, sliced (or similar mild chili peppers)
1 can of beef broth
1 can of diced tomatoes
2-3 cups of water
2-3 dashes of Worcestershire sauce

Recommended Spices:
1/3 teaspoon pepper
1/4 teaspoon sage
1/4 teaspoon dried cilantro
1/2 teaspoon oregano
1/4 teaspoon curry powder
1/4 teaspoon paprika

 

1. In a large pot, spray Pam around inside edges. Pour enough olive oil into bottom of pot to cover entire bottom surface. Place on medium heat.
2. Peel and dice potatoes.
3. Spray Pam onto a large ceramic plate and place diced potatoes on top. Cover with a paper plate and cook on high for 6 minutes.
4. Peel and slice carrots into 1/2 in. thick pieces.
5. Put carrots in pot and allow to simmer, stirring occasionally with a large plastic or wooden spoon. Remove the spoon from pot when not stirring.
6. Slice the squash and add that to the pot.
7. Pour half of the vinegar evenly on to the carrots and squash. Sprinkle liberally with salt.
8. Dice the onions (1/2 of red, 1/2 of a white) and add to the pot. Stir.
7. Slice and press the garlic. If you don't have a garlic press, slice and dice into thin pieces, then use the back of a fork head to crush it . Add it to the pot and stir it in.
9. Add the pre-cooked diced potatoes but do not stir yet..
10. Pour the rest of the vinegar evenly onto the potatoes. Sprinkle liberally with salt.
11. Slice the celery and peppers and add them. Stir.
12. Immediately pour in the beef broth, then the diced tomatoes. Stir.
13. Add the Worcestershire sauce, spices, and water. Stir.
14. If there's room in the pot, add some kidney beans or pre-cooked pasta.
15. Leave on medium heat and allow to simmer for about 12-15 minutes, (or until celery is tender enough) stirring every 5 minutes.
16. Remove from heat or put on low heat and serve.
17. Allow to cool down and put leftovers in a tupperware container in fridge. When reheating it, add a little water.

Preparation Time: 12 - 15 minutes Serves: 6-10
