Easy French Onion Soup An easy mock-up of the fancy favorite |

3 whole onions sliced (any type) 2 tbsp butter or margarine 2 cans (14 oz) beef stock 3 beef bouillon cubes 3 cups water 1/2 can beer (your choice) 4 slices provolone cheese 4 slices swiss cheese 4 slices French or Italian bread

Melt butter/margarine in a medium or large saucepan on medium-high heat. Add onions and stir frequently until onions are soft and translucent. Add beer and stir, making sure to remove any onion that may have baked to the bottom of the saucepan. Add broth, bouillon and water and stir. Bring to a boil and remove from heat.
Toast bread with cheese layered on top in oven long enough to melt the cheese. Place in the bottom of bowls and ladle soup on top. Serve.
