8 bone-in pork chops 3 large baking potatoes, chopped 2 cans diced tomatoes 2 cans pork & beans 1 package frozen green peas 1 large or 2 medium onions 6 cloves garlic, minced; or 3 teaspoons minced from jar 3 tablespoons (approx) dried minced (not ground) oregano Salt and pepper to taste

Place pork chops in a deep baking pan and put in a pre-heated 350 degree oven for about 15 minutes – until some fat is rendered.
In a large saucepan, bring remaining ingredients to a boil, and allow to simmer while the pork chops are heating.
Pour vegetable mixture over chops and cover roasting pan with aluminum foil Return to oven and bake for 1 hour to 1 hour 15 minutes, or until potatoes are tender.
