French Onion Soup a la Joe
French Onion Soup
4 large spanish onions cut in half and thinly sliced
3 Tbls. butter
2 Tbls. flour
1 tsp. salt
3/4 tsp. ground black pepper
2 cloves garlic, finely chopped
1 tsp. sugar
1 1/2 Tbls. dried parsley
1/2 tsp. dried thyme
2 cans beef consomme
2 cans cold water
1 cup dry white wine or beer
1 Tbls. cognac or brandy

 

Saute the onions in butter until limp and a deep golden colour.

Add the flour, salt, pepper, garlic and sugar.

Cook over a medium heat for 2-3 minutes constantly stirring.

Add the consomme, water, parsley, thyme and wine. Bring to a boil, cover and reduce heat to low.
Let simmer for 45 minutes and then add the cognac.

Adjust the salt and pepper to taste.

Put toasted french bread in the bottom of the bowl and pour soup over the bread. Then add a layer of mozzarella cheese, then some gruyere cheese and then top it off with grated parmesan.

Put under the broiler until cheese is melted and golden.
