French Onion Soup
6 thinly sliced onions
2 Tbls butter
2 Tbls olive oil
4 cups beef broth
2 Tbs dry red wine
1/2 tsp thyme
1/2 tsp salt
1/2 tsp black pepper
1 inch thick toasted french bread slices
2 cups swiss cheese, grated

 

In a large soup pot melt butter and olive oil.
Add onions and thyme.
Cook over a low to medium heat until a nice golden brown color. Making sure to stir onions so that they do not burn. this process should take about 30 minutes.
Add the red wine and cook off ( about 2 minutes).
Add beef broth, salt and pepper and boil over medium heat for 20 minutes.
remove from heat and place in 4 oven proof bowls.
Float french bread on top to cover soup.
Sprinkle 1/2 cup of swiss cheese over french bread to cover top of soup.
Broil for a couple minutes until cheese starts to bubble.
Serve hot.
