Garlic Soup (Sopa de Ajo) Traditionally Spanish, Simple to Make! |

1/3 cupful good olive oil 6-8 large cloves garlic, crushed and chopped 6 slices of bread, cubed 3 pints boiling water or stock 1 tsp. paprika Salt, to taste 4 eggs Chopped parsley

Heat the oil in a flame-proof pot and fry the garlic and bread cubes until a golden colour. Stir in the paprika and then add the boiling water or stock and the salt. Cover the pot and allow the soup to simmer until the bread is completely incorporated in the broth, about 6-8 minutes.
You can either put the soup into earthenware bowls, drop an egg in each and poach the eggs on top of the stove or in the oven, OR beat the eggs and stir into the very hot soup, off the flame, until the soup is thickened.
Either way, serve with chopped parsley.
This is a delicious poor man's soup which is now found in good restaurants all over Spain.
