1 kilo (2 lbs.) lamb 1 swede turnip 2 large leeks 450 gms (1 lb.) potatoes 250 gms (1/2 lb.) carrots 1 dessert spoon flour parsley salt pepper water

Put meat in a large saucepan, cover with cold water, add salt and pepper and bring slowly to the boil. Skim the fat off the surface.
Add sliced carrots and swede turnip, add sliced whites of leeks. Simmer for two hours.
Add cut-up potatoes and simmer 30 minutes longer.
Thicken with flour mixed with a little water.
Add chopped green part of leeks and simmer a further ten minutes.
Serve sprinkled with chopped parsley.
