Jambalaya with Chicken
Hearty Jambalaya with Rotisserie Chicken
2 Tbls. olive oil
16 oz. smoked sausage (we like Hillshire Farm brand), sliced into bite sized pieces
1 rib celery, chopped
1/2 onion, chopped
1/2 green pepper, chopped
2 cloves garlic, chopped
1 14.5 oz. can diced tomatoes, (Italian style if you can find them)
1 cup of your favorite spaghetti sauce
2 cups chicken broth
2/3 cup long grain
1 tsp. basil
pinch salt and pepper
1/2 tsp. hot pepper sauce
1 bay leaf
1 Rotisserie chicken, meat pulled and chopped into bite sized pieces.

 

In a large Dutch oven (or other large pot), heat oil over medium heat. Saute smoked sausage until browned. Remove and set aside.

In the same pot, saute celery, onion, pepper and garlic until soft, approximately 3-5 minutes.

Stir in all ingredients: tomatoes, spaghetti sauce, chicken broth, rice, basil, salt and pepper, hot pepper sauce, bay leaf, chicken and smoked sausage. Bring to a boil and immediately reduce heat to a simmer.

Cover and continue to simmer, about 30 minutes or until rice is tender.

Discard bay leaf and serve immediately.

Serve with sourdough bread, crusty French bread or cornbread
