Khoreshte Karafs Celery Stew |

400 Gr. Lamb Meat 2 Medium Onions 1 bunch Celery 300 gr. mix of mint and parsley 1/2 cup cooking oil 1 tsp. salt 1/2 tsp. black pepper 1/4 tsp. saffron 2 Tbls. Lime Juice

Slice onions and fry in oil for 2 minutes. Cut meat into 3-cm pieces and fry in onions with salt and pepper for 5 minutes. Pour in 4 glasses of boiling water and cook for 1 hour. Cut celery into small pieces and fry in oil, chop mint and parsley fine and add to celery to fry and then add to the meat and continue cooking for 30 minutes.
At the last 10 minutes add saffron and lime juice to the stew.
This stew is served with rice.
