Lobster & Shrimp Bisque

8 Oz. cooked Lobster Meat 8 Oz. cooked Shrimp 6 Tbsp. Butter 1 Cup minced Green Onions ½ Cup minced Celery 1 Tbsp. minced Carrots 6 Tbsp. All Purpose Flour 2 ½ Cup Half and Half 2 ½ Cup Chicken Broth ¼ Tsp. Nutmeg ¼ Tsp.White Pepper 1/8 Tsp. Cayenne Pepper 6 Oz. Tomato Paste 1 Cup Heavy Cream 1 Sprig chopped Tarragon Leaves 10 Each of cooked Shrimp

1. Melt butter over low heat in saucepan. Add minced onion, celery, and carrots. Cover and sweat until tender (approx 5 minutes).
2.Whisk in flour and cook for two minutes.
3.Whisk in Seasonings, Half and Half Broth and Tomato Paste, bring to a boil while whisking occasionally.
4. Add cooked Lobster and shrimp, place in blender to puree.
5. Serve and garnish with a single cooked shrimp and fresh Tarragon.
