Old Fashion Chuckwagon Stew
2 lbs Stew Meat
2 Tbsp. flour
2 Tbsp. chili powder
2 Tbsp. Oil (your choice)
2 large Onions, chopped
1 can of diced Tomatoes
2 cups of water
4-6 medium potaoes, peeled and cut
4 carrots, peeled and sliced thin
1 head of green cabbage, chopped
1/4 tsp. oregano
salt and pepper, to taste
1 can of peeled diced green chilis (optional)

 

In a medium bowl, place cubed stew meat, the flour, and chili powder together. With your hands, mix till the meat is thoroughly coated.
In a large stewing pot, put in oil, and set stove on medium high. When oil is hot, add meat mixture and brown, stirring constantly so it wont stick.
After it has browned, add onions and cook until tender. Add diced tomatoes (and green chilis) and the water. Add the remainder of your ingredients, reduce the heat between low to medium and cover tightly with a lid. Simmer for two hours.
