Prawn Soup

500g white prawns 1 clove garlic, crushed 2 tsp. Cornflour 1/2 small cucumber, deseeded and grated 2 tsp. butter 1 egg 3 cups water
|
Clean prawns, remove vein, wash well and mix with cornflour.
In a large pan put the heads and the shells of the prawns and wash well and add the water, salt and bring to a boil. Let simmer for 10 minutes. Strain the prawn stock and leave aside.
In a pan melt butter, fry the garlic over a low heat add the prawns and fry for 2 minutes.
Add the stock and grated cucumber, bring to a boil and let it simmer for 10 minutes.
Finally beat in the egg and beat vigorously for 2 minutes.
Serve at once.
For a variation add 2 Tbls. of sweet corn to the soup before the egg is added.
