3 catfish (cleaned and skinned) 1 lb. potatoes, peeled, cubed 8 slices bacon, cooked ketchup 1 vidalia onion Texas Pete hot sauce salt pepper garlic powder
|
Cook catfish until falling off bone in 1 quart of boiling water that has been seasoned with salt pepper and garlic powder. Let fish cool and reserve broth.
Add potatoes and crumbled bacon, chopped onion, tobasco sauce and ketchup until stew is a light red, allow to simmer until potatoes are almost done, flake fish and add to stew simmer until potatoes are completely done stirring frequently.
Tips: You can cook the fish in a pressure cooker to save time, also you may add a touch of sugar for sweetness. Enjoy!
