Spicy Chicken, Tomato & Rice A full flavoured hearty soup for the whole family |

2 tbsp(30ml) olive oil 1 medium onion, finely chopped 2 garlic cloves, chopped or 1/2 tbsp minced garlic 1 carrot, chopped diagonally & halfed 1 stalk celery, chopped diagonally & halfed 1/4 large red capsicum(Bell pepper), finely chopped ? x fresh hot chillis to desired heat level 1L chicken stock 1L water 400g can diced tomatoes 1/2 cup short or medium grain rice 1 fresh chorizo sausage, sliced & quarted 300g skinless chicken thigh, cubed

Heat olive oil in a large saucepan over medium heat. Add onion, garlic, carrot, celery, capsicum and chilli, cook until vegetables soften and onion goes translucent, stirring occasionally.
Add stock, water, tomatoes and rice, bring to the boil, lower heat and simmer, mix well.
In a large frypan over high heat, add the chicken and chorizo, cooking until chicken is just pink in the middle. Add the chicken and chorizo to the soup and simmer with lid on for 15 mins or until rice is tender.
Garnish with fresh chopped parsley or basil.
