Spicy Gazpacho Chilled Hot Soup! |

2 thin-sliced cucumbers 1/2 Bunch of Celery 1/2 Red Onion 1/2 Red Bell Pepper 1/2 Yellow or Green Bell Pepper 2 Small Hot Chili Peppers 4 Scallions 4 Cloves Garlic 1/2 Cup Fresh Parsley 1 Tbls. Tobasco Sauce 1 Tbls. Salt 1 Tbls. Fresh Ground Black Pepper 1 Tbls. Red Wine Vinegar 2 Tbls. Olive Oil 4 Cups Spicy V8 Juice or 4 Cups Tomato Juice OR 6 Ripe Red Tomatoes

Slice the Cucumbers thin.
De-seed the Peppers.
Slice the Scallion Greens thin and set all aside.
Finely chop all the other vegetables except the cucumbers and tomatoes or blend at Chop Speed in a Food Processor(If using whole tomatoes, puree them separately).
Combine all the chopped vegetables, oil, vinegar, tobasco, salt and pepper in a bowl with 3/4 of the sliced cucumbers.
Add the tomato juice/puree/V8 Juice and chill thoroughly.
Garnish with the remaining sliced cucumbers and scallion greens.
Serve with Sourdough bread and a good Chablis.
I don't care for whole tomatoes and their seeds, so I prefer this dish done with the Spicy V8 Juice!
