Split Pea Soup

2 Cups split peas, dried 1 Meaty ham bone 1 large onion, chopped fine 3 Stalks celery, chopped fine 3 Medium carrots, peeled and sliced 2 potatoes, peeled and diced 10 cups of water 1 Garlic clove minced 2 bay leaves 1 tsp salt 1 tsp black pepper

Add ham bone, peas and spices to water. Bring to a boil. Reduce heat and simmer for about 30 minutes. Add remaining ingredients, simmer covered for about 2 1/2 hours or until peas are tender. Remove ham bone and bay leaves from pot. Cut ham off the bone, dice and place ham back into the soup.
