Tortellini Soup Nothing Better Than This on a Cold Winter's Day! |

1 lb. Italian Sausage (in links) 1 cup sliced onion 5 cups beef broth 1/2 cup water 2 cups crushed or diced tomatoes 1 cup carrots, sliced thinly 1/2 tsp. basil 1/2 tsp. oregano 8 oz. tomato sauce 1 1/2 cups sliced zucchini 2 cups cheese tortellini 3 Tbls. fresh parsley 2 cans green beans 1 large can of your favorite spaghetti sauce 1/2 cup catsup (yes, catsup!)

Brown sausage (whole links) in large skillet. Drain fat. Set sausage aside to cool.
Saute onions. As onions become translucent, pour in the can of diced or crushed tomatoes. Stir until the nice brown sausage stuff in the bottom of the pan leaves the pan and joins the sauce. Pour this all into your soup pot.
Add all other ingredients except the tortellini and zucchini.
Now slice sausage and add to soup. Bring to a boil, stirring very often (to prevent scorching) then reduce to a low simmer and let simmer for about 45 minutes to an hour.
Add zucchini and tortellini about 30 minutes or more before serving.
If you need it to be ready faster, cook the tortellini separately and drain before adding to soup. Freezes well!
CROCK POT HINT: Don't saute onions, simmer on low all day, and add zucchini and tortellini 2 hours before serving and turn on high.
This is a super dish, I've made it for friends who were sick or had a family crisis, and it always receives rave reviews!
