White Bean Soup Latino Style |

2 15oz. north western small white beans, canned 1/4 Cup barley 2 Quarts chicken stock 3 Carrots, diced 2 Tbls. olive oil 1 Medium onion, chopped 1 tsp. parsley flakes 2 Medium size tomatoes, diced 2 Stalks celery, chopped 1 Tbls. seasoning (with celantro and achiote) 1 Tbls. chopped garlic Salt to taste

Combine Oil, onions, and garlic. Cook until onions are soft.
Add chicken stock and bring to boiling.
Add barley, celery, carrots, diced tomatoes, and seasoning.
Boil for 10-15 minutes or until barley is tender, add beans and boil for another 5 minutes.
Reduce heat, stir and serve! Enjoy!
