Coriander & Black Pepper Rub a mingling of spice and sweetness |

Ground coriander seed Ground black pepper Ground sea salt (your choice)
|
Mix liberal ammounts of each in a bowl, using more coriander and pepper than salt. Use as a rub for pork or poultry parts, including wild boar and various wild fowl.
Usage: Apply a coating to meat and gently rub into it. Let meat stand, refrigerated, before cooking to allow rub to sink in.
