April's Quick and Easy Loaded Mashed Potatoes

5 lbs. white potatoes 8 oz. sour cream 1 very small onion, chopped fine, opt. 2 bags of Real Bacon Pieces 8 oz. fine shredded cheddar cheese 3 Tbls. butter Salt and pepper, opt.
|
Preheat oven to 400 degrees F.
Peel potatoes and cut into cubes
Put potatoes and chopped onion into 3 quart pot and salt to taste.
Boil potatoes with chopped onion until they are soft, then drain.
Mash potatoes but leave them chunky.
Fold in butter, sour cream and 1/2 bag Real Bacon pieces and pepper to taste.
Pour into square cake pan.
Sprinkle top with remaining Real Bacon Pieces.
Sprinkle top with shredded cheese.
Bake on 400 degrees F. until cheese is melted.
Serve!
