6 even-sized potatoes 3 oz. soft butter 1/2 cup warmed full cream milk 1 egg (optional) salt pepper Extra butter, melted

Peel and halve the potatoes and place in cold water to cover. Bring to boil and boil rapidly until well-cooked. Drain well and place back on low heat for 1 minute, covered with a kitchen towel. This thoroughly dries the potatoes.
Break potatoes up with a masher. Add butter, warm milk, salt and pepper to taste, and begin to beat potatoes.
Add egg, if wished, and continue beating until very smooth and fluffy. Pile in a dish and place in a warm place until ready to serve.
Drizzle a little extra butter over the dish. Mmm-mmmm!
