Candied Sweet Potatoes
4 Large Sweet Potatoes
3 Tbls. Butter
2/3 Cup White Sugar
1/4 tsp. Cinnamon, ground
1/4 tsp. Nutmeg, ground
Salt, to taste
1 tsp. Vanilla Extract


Peel the sweet potatoes and cut into slices about 1/4 inch thick.

Melt the butter in a heavy skillet and add the sliced sweet potatoes.

Mix together the sugar, cinnamon, nutmeg and salt. Cover the sweet potatoes with the sugar mixture and stir. Cover the skillet and reduce heat to low. Cook for about 1 hour, until sweet potatoes are candied, stirring occasionally.

Sweet potatoes should be tender but a little hard around the edges. The sauce will turn dark.

Stir in the vanilla just before serving. Serve Hot.
