Creamed Cabbage with Walnuts
I hated cooked cabbage until I tasted this!
1 Medium head cabbage, shredded
2 Tbsp. butter
2 Tbsp. cornstarch
1 tsp. salt
1/4 tsp. pepper
2 cups milk
1/2 cup coarsely chopped walnuts
1 cup shredded Swiss cheese
1/4 cup soft bread crumbs

 

Cook cabbage in 1 qt. boiling water with 1 tsp. salt ~7 minutes. Melt butter over medium heat; remove from heat and blend in cornstarch, salt and pepper. Gradually blend in milk; cook over medium heat, stirring constantly until thick and comes to boil. Drain cabbage well. Arrange layers of cabbage, walnuts, sauce and cheese in greased 1 1/2 qt. casserole dish. End with layer of cheese. Bake in 450F oven for 10 minutes.
