Easy Cheesy Potatoes

3 bags Simply Potatoes brand shredded potatoes
1 quart half and half
1 stick butter
4 cups shredded mild cheddar
salt/pepper

In a 13x9 glass baking dish, spray with nonstick spray. Layer one bag of potatoes on bottom. Layer a generous portion of cheese. Repeat layers with final layer being cheese. Pour 3/4 of the container of half and half over the potatoes & cheese. Cut butter into squares and arrange evenly over top. Salt/pepper to taste. Cover loosely with foil and bake 50 minutes at 350 degrees. Remove foil and bake another 10 minutes.
