Easy Italian Potato Casserole Side Dish |

4 to 6 potatoes 1/4 cup oil 1 onion chopped fine 2 tomatoes 1 cup bread crumbs 1 tsp. dried oregano salt and pepper
|
Peel potatoes and slice.
Cook onion in 2 tablespoons of oil for 5 minutes.
Add potatoes and saute for 3 minutes.
Season with salt and pepper.
Transfer to baking pan which has been sprayed with non-stick cooking spray.
Top with diced tomatoes.
Sprinkle with oregano and breadcrumbs.
Drizzle with oil.
Bake at 400 degrees F. until tender. About 30 minutes. Enjoy!
