Fast and Easy Fried Rice

1 cup (250 mL) liquid eggs 2 tbsp (25 mL) olive oil 1 1/2 cups (375 mL) sliced mushrooms 1 cup (250 mL) diced sweet red pepper 4 cups (1 L) cooked rice (1 1/3 cups/325 mL raw rice) 1 cup (250 mL) frozen green peas, thawed 2 green onions, sliced 2 tbsp (25 mL) sodium-reduced soy sauce, optional

Pour liquid eggs into heated (25 cm) frying pan sprayed with cooking spray.
Cook like an omelet, pulling mixture from sides to centre of pan until set.
Remove from pan.
Cool; cut into strips.
Set aside.
Heat olive oil in same pan or wok.
Sauté mushrooms and red pepper, stirring often until tender.
Add rice.
Cook, stirring to mix well.
Add peas, onions and egg strips.
Heat through. If desired, stir in sodium-reduced soy sauce.
Mix well.
Serve hot.
