Firefly's Creole Jambalaya
Left Over Dish with Meat n' Rice!
Note: Jambalaya is a left over dish, meaning that the ingredients are what is available in the frigerator or last few meals, the following is the basic recipe for the sauce, add what ever you like, experiment, enjoy.

1-Roasted/smoked 4lb plus Chicken Deboned, diced,
3lbs. smoked pork sausage, diced,
3 lg. yellow onions, julienned,
3 lg. cloves garlic, smashed, diced,
Roux--
1/2 cup bacon grease, or if you must veggie oil(ugh!)
1/2 cup finely ground whole white flour, Plain,
1 cup bell peppers, diced,
1 cup celery, diced,
1 cup mushrooms, diced,
1 16oz. can green peas,
1 cup carrots, diced
2 cups cooked, steamed rice, white or brown,
1 16oz. can tomato sauce
Cavenders Greek seasoning for taste
2 Tbls. Chili powder
2 Bay leaves
1 big appetite
About 10 Chicken Boulion cubes

 

How to’s:
First the Roux!
Take them grease, put in them skillet, light them fire, Medium to High heat, get ‘em almost smoking hot, then sprinkle in them flour, n’ watch em’ explode, keep adding a little flour at a time until all is in them grease, slightly runny n’ stir, and keep on a stirring until them roux is dark brown, watch ‘em close cause ifn’ you burn it you gotta start over.

Now add them onions, stir, stir some more, add the garlic when them onions are translucent, almost clear, and brown them garlic, next add them celery and watch them soften, add them bell peppers and watch them soften too. Now quickly add enough water to stop the cooking and then add some more, you want it runny for now.
Next stir until it boils. add the rest of the ingredients, except the rice and stir some more. Now you want to cook down the fluid(liquid if rednek) to a semi-thick gravy, add salt and pepper, with a touch of chili powder now bringing it up to flavor. We recommend Cavenders Greek Seasoning for all dishes as it is good Sash! Now add them Tomato Sauce and stir some more. When you got the gravy just right, pile in them rice and stir. Them rice should be mixed in cold as not to get gummy. Now eat plenty out them pot cause friends n' family ain't likely to let you get at it after it hits them table.
