Garden Szechuan Vegetable Stir Fry
Chinese Food
3 Tbls. canola oil
1 red pepper, julienned
1 green pepper, julienned
1 yellow pepper, julienned
1/2 cup red onion, julienned
1 cup thick cut Yellow squash
1 cup zucchini
1 baby eggplant
1 minced garlic
1-2 Tbls. grated ginger
1/4 cup sesame oil
1/2 cup teriyaki sauce
1/2 cup canned mushrooms
3 cups bok choy
1/2 tsp. cayenne pepper
1 cup snowpeas
Chicken or Tofu, if desired

 

Once you have assembled the above ingredients, simply stir fry them up and serve hot over rice or noodles!
