Green Chile Grits
Cheesy Side Dish
6 cups water
1 1/2 cups grits
2 cups grated sharp cheddar cheese
1 stick margarine
1 Tbls. Tabasco, or your favorite red pepper sauce
1 tsp. salt
3 eggs
1 large can diced green chiles
non-stick cooking spray

 

Preheat oven to 350 degrees F.

Bring water to a rolling boil, stir in grits and boil for 2 minutes, remove from heat.

Mix in cheddar cheese, salt, margarine and Tabasco, stir well. Cover and let cool for 15 minutes.

Now add the 3 eggs, beaten and a can of diced chiles, mix well.

Coat 9x13 baking dish with non-stick cooking spray and pour in grit mixture. Bake uncovered for 35 minutes, or until top begins to brown.

This can be used as a main dish if a package of chopped ham is added before baking.
