Greens - Southern Style Traditional Southern Greens |

2 lbs. fresh greens (collard, kale or mustard) 2 ounces of salt pork - diced 1/4 tsp. red pepper flakes 1/4 tsp. salt

Wash greens well. Soak in several changes of cold water. Drain.
Put them in a large pot and cook over medium-high heat about 8 to 10 minutes until stems are tender. Stir occassionally.
Drain and coarsely chop.
Add salt pork to skillet and crisp it - about 5 minutes.
Add pepper flakes and salt. Stir in chopped greens. Cover and cook about 15 minutes.
