Hash Brown Potatoes |

4 baked potatoes (pre-cooked) 1/4 cup corn oil
|
*This recipe works best with pre-cooked baked potatoes that have been refrigerated overnight.
Cut the potatoes in half and then shred into a bowl using a cheese grater. You do not want the potato skin, just the meat of the potato.
Heat the oil in a large skillet to medium and place the shredded potatoes into the hot oil.
Pat down the potatoes and cook for about 5 minutes or until they are golden brown.
Flip the potatoes over like a big pancake and cook on the other side till they are heated through. Since the potatoes are pre-cooked this should only take a few minutes.
