Hot Sweet Potatoes with Honey-Wine Reduction DELICIOUS over fried plantains or bananas |

2 large sweet potatoes or yams 4 T butter 1/2 t cayenne pepper (more or less to taste) 1/2 t sesame seeds 1/3 c. white wine 3 T honey

Peel and dice potatoes into 3/4 inch cubes. Melt butter over medium-high heat. Add potatoes, cayenne, and sesame seeds. Saute until potatoes are cooked about half-way through. Add wine and honey. Reduce heat to medium-low and simmer until liquid is reduced at least and thick.
Delicious over fried plantains (as a starch side): Slice green plantains approx. 1/2 in. thick. Place in hot frying pan with melted butter. Smash with back of spatula. Turn when golden brown.
Also great over fresh sliced bananas as a sweeter side or even dessert - with a kick!
