Jalepeno Pie
4 eggs
600-650gr colby or cheddar cheese
6-10 jalepeno peppers (enough to cover the bottom of pie plate)


Cover the bottom of a GLASS pie plate with diced or sliced jalepeno peppers. Grate colby or cheddar cheese over top, until plate is about 3/4 full. Beat 4 eggs with a fork and pour over cheese. Grate more cheese until pie plate is heaping full. You may or may not use the whole 600gr.of cheese depending on size of plate.

Preheat oven to 275-300 degrees and bake for 50 mins. Let cool and cut into squares or wedges.

Serve with cornchips or nachos.

*If a jalepeno is not your thing, any type of pepper can be used.*
