Old Fashioned Baked Beans
Baked Beans - Hutch's Favourite
1 lb. yellow eye beans
2 tsp. dry mustard
pepper
1 Tbls. salt
4 med onions, cut into eighth’s
1/4 cup brown sugar
1/4 C ketchup
1/4 cup molasses
2 Tbls. sweet pickle juice
1/4 lb bacon, cut into one inch pieces

 

Wash and clean the beans. Place in a pot, cover with water until level is one or two inches above beans. Soak overnight or at least 8 hours. Beans will absorb much of the water and expand considerably during the soaking process.

After soaking, add enough water to cover beans again. Add all remaining ingredients, EXCEPT BACON. Boil, covered, about 1 to 1-1/2 hours or until skins of beans begin to wrinkle.

Heat oven to 250 degrees F. Line bottom of the bean crock (or cooking pot) with the bacon pieces. Transfer the beans, and enough liquid to cover, into the bean crock. Sprinkle generously with pepper. Bake, covered, 6 to 8 hours, until tender.

After four or five hours check liquid and if needed add enough water to cover the beans. Check seasonings (salt/pepper) and desired sweetness/tartness of the liquid at this point and adjust to taste with brown sugar or molasses if required.

Continue baking. Uncover for the last 30 minutes.

Serve with hot, home made, sweet brown bread smothered with lots of butter.
