4 medium Idaho potatoes vegetable, canola, or olive oil seasonings: sea salt, celery salt, garlic powder, dill weed, tri-color pepper

Preheat oven to 350. Slice/dice potatoes into small cubes. Coat a cookie sheet in about 1/4 inch of oil. Mix more oil and seasonings in a small bowl. Place potato cubes on pan and brush with seasoned oil. Cook in oven (top rack) for 50 minutes, stirring and re-brushing potatoes every 15 minutes.
