Simple Sauted Mushrooms Mushrooms Sauted in Wine |

1 1/2 lbs. Porta Bello Mushrooms or equivalent 1/2 stick butter or vegetable oil 1-1 1/2 cups Perrigrino Sweet Marsala Wine (important) do NOT use cooking wine, as they use seasonings to alter taste, The Perrigrino Sweet Marsala is an excellent wine for cooking all sorts of things, I use it often.

Wash and damp dry the mushrooms, slice to preference (I prefer thick). Heat saute pan over medium heat, after it is hot, add 1/2 the butter or margarine, add sliced mushrooms, stir often, allowing the mushrooms to brown slightly (slightly crisp). Add 1/2 of the wine and simmer until the wine is mostly evaporated. At that point, turn off the heat, add the rest of the butter, allow it to melt, then add the rest of the wine. Stir frequently, allowing the juices to mix. Serve with steak, seafood, or over potatoes. Sauce can be thickened using any conventional thickening sauce. Enjoy!
