Southern Potato Pancakes Mouth Watering Pancakes |

2 Cups of Leftover Mashed Potatoes 1 Medium Onion, diced 2 Eggs (beaten in small bowl) Self Rising Flour Salt and Pepper
|
In bowl put Mashed Potatoes with Diced Onion, add the 2 beaten eggs, Stir with fork.
Add flour to make the ingredients the consistency to be made into patties.
Add salt and pepper to taste. Pour cooking oil into skillet and pre-heat for frying. Flour your hands and make the patties.
Fry until brown on one side, turn over and mash down with spatula to flatten them more. Fry until brown.
Eat with other veggies or eat alone as a good snack. These are good cold the next day also!
