Spicy Baked Beans
A spicy & bold twist on a family favorite!
1 lb. dry navy beans (about 2 c.)
1/2 tsp. baking soda
4 c. tomato Juice
1 3/4 c. brown sugar (tightly packed)
3 tbsp. molasses
2 tsp. ground black pepper
2 tsp. cayenne pepper
1/4 tsp. ground cloves
1 1/2 tbsp. mustard (brown mustard is great)
1/4 tsp. paprika
1 c. onion, chopped
8 slices of bacon, cut into 1-2 inch pieces
dash, nutmeg
dash, hot pepper sauce

 

Soak beansin water overnight (or 6-8 hours). Rinse. Cover with new water, add soda, and bring to a boil. Continue cooking over medium heat for 35 minutes. Rinse beans in cold water. Combine all remaining ingredients except bacon and onion. Pour mixture over beans; add bacon and onion to beans. Stir well. Pour into 3-qt. casserole or bean pot and cover. Bake at 300 for 5 hours or until tender. Remove cover during last 30 minutes of baking. Yields two quarts.
