Stuffed Banana Pepper Delicious |

1 2-3 lb. Beef Roast 1 can beef bouillon (or use bouillon cubes) Italian seasoning (to taste) garlic onion (chopped) 1 bay leaf salt Pepper Banana peppers (depending on how large roast is) shredded mozzarella cheese
|
Cook roast, seasonings, and bouillon in crockpot all day. When roast is done, shred beef saving broth.
Cut tops off banana peppers. Slice peppers the long way and pull seeds out, rinse.
Stuff each pepper with beef. Pour broth over and then sprinkle cheese on each stuffed pepper.
Cover with aluminum foil bakc at 350 degrees for 45 minutes.
