Amy's Italian Chop Suey Vegetables in Tomato Sauce |

1/2 cup of olive oil 2 medium onions 1 green pepper 2 garlic cloves - minced 2 or 3 large carrots 2 or 3 medium potatoes 2 small cans of tomato sauce handful of Italian flat leaf parsley - minced 3 medium zucchinis pinch of oregano salt and pepper to taste
2 cups raw rice
Note: Cut all vegetables into large bite sized pieces

Put olive oil in dutch oven. Saute garlic, parsley, and onion on low flame for a few minutes, stirring.
Put in everything else except the zucchini and saute about ten minutes more.
Add the tomato sauce with about 8 oz. of water. Cover and simmer about half an hour.
Put in the zucchini and cook about another half hour or until all vegetables are done.
Note: Add more water if needed, should not be soupy but a stew consistency.
Serve over cooked rice with grated cheese on top with Italian bread and a light side dish such as pineapple slices or other fruit.
Note: Adjust quantities of vegetables according to your family.
