BOTTLE GOURD - TOMATO STEW
Bottle Gourd Curry With Tomato
Bottle Gourd belongs to Cucurbiata group. Also known by other names such as Louki, Calabash, Quara, Green major, Cucuzza and Trumpet guord, Bottle gourd is rich source for carbohydrates, calcium,iron and B complex vitamins. Bottle gourd juice plus lime juice cures burning sensation in the urinary passage. Bottle gourd juice cures acidity, indigestion,constipation and ulcers. It is Indigenous to Africa. Now cultivated widely in many countries. Bottle gourd is the oldest domesticated plant.

150 grams Refined oil.
1 slender and tender Bottle gourd.
6 ripe Tomatoes.
1 cup chopped Onions.
1 spoon red Chilly powder.
3 Green Chillies- chopped.
1 spoon mustered seeds,
6 Garlic cloves- slightly mashed.
1 spoon chopped Ginger.
Salt to Taste.

 

Peel the outer skin of bottle gourd, wash and cut into small pieces. Before cutting into pieces, remove the seeds and the central spongy material. Cut the tomatoes into pieces.

Take a deep bottomed pan, add oil and heat. Splutter the mustered seeds. Add green chillies, onions, garlics, ginger pieces and red chilly powder and saute well. Now add the bottle gourd pieces, mix well and fry.

Add the tomato pieces and salt. Stir thoroughly, add one cup of water and simmer on medium flame until the ingredients blend with each other well.

SERVE HOT WITH RICE OR PAN CAKES.
