l large onion - cut into chunks 2 large garlic cloves - sliced thin l green pepper - cut into chunks l yellow pepper - cut into chunks l red bell pepper - cut into chunks 3 or 4 carrots - peeled and cut into strips and halved (keep them fairly large) 2 zucchini - washed, ends cut off, and cut into thick circles - about l inch l pkg. fresh mushrooms - halved 2 Tbls. fresh flat leaf parsley - minced l/2 tsp. oregano l/2 tsp. basil salt and pepper to taste l can (large) crushed tomatoes l can Pasta Ready Del Monte Stewed Tomatoes (Italian, Zesty or Japaleno)

Saute garlic and spices. Add onion and tomatoes. Simmer l0 minutes.
Add rest of ingredients. Cover and cook until vegetable are tender.
Serve over pasta. Ziti is very good with this dish.
Note: This is an easy recipe to double or add any other ingredient you like (such as peas, broccoli, etc.)
