Bulgur pilav-Adana Turkish Recipe! |

2 1/2 cups coarse bulgur wheat-cracked wheat 5 large onions, chopped 2 large tomatoes, peeled and chopped 1 small, hot Italian green pepper, sliced, if desired 10 Tbls. margarine 1 1/2 cups beef broth, hot 1 Tbls. salt 1 tsp. black pepper

Wash and drain the bulgur. Allow to sit and dry slightly. Over medium heat, saute the onions and bulgur in margarine, stirring frequently for 25 to 30 minutes. Add the tomatoes, sliced hot pepper, salt, pepper and hot broth. Stir well, cover and simmer for 15 minutes over low heat or until liquid is absorbed. Lower heat to VERY low and allow to steam for 20 to 30 minutes more, being careful not to burn. Remove from heat and allow to stand for 10 minutes before stirring. Serve warm. I like this dish with a side dish of plain yogurt!
